This roast pork (xiao shao rou), which comes in small pieces, originated in folk culture and has long known as the best dish in Datong, Shanxi province. It is red, tasty, and tender, and fat but not greasy, and reflects the eating habits of the local people and the enthusiasm and bold, unconstrained behavior of the people of northern Shanxi.
